T his oil is extracted from the paste of pitted olives, which are harvested from onset of ripening and successivley pressed with an innovative technological process different from the traditional one.
This oil has a strong grassy – fruity aroma, well balanced with harmonious sweet, bitter and spicy notes.
It contains less peroxides and polyunsaturated acids and more phenolic antioxidants.
